| Gourmet Cookery Courses are hands-on tutorials rather than cooking demonstrations. Practical skills are taught right through to the presentation of the finished dish. Course subjects range from learning about the area's regional cuisine with its exciting and stimulating influences from Spain, Africa and the Far East. We use local fresh fish, cheese, vegetables and meat, and recipes include ‘Fusion’, ‘Oriental’ and the ever popular ‘Exciting Dinner Party Recipes’. Classes and demonstrations are held in our spacious and well equipped kitchen at the Chateau. Courses are created for groups as well as individuals, whether professional or amateur. | |

Wine Tours have been created from a search for the best local wines from Les Corbières and Le Minervois that are served in the restaurant. Wine tours are for two to eight people and visit selected producers deep in the countryside that one would not find as a tourist. A thorough understanding of wine production is explained along with the 'assemblage' or blending of grape varieties. |
| The owners themselves provide a dégustation (wine tasting) at each Domaine and guests have the opportunity to buy the wines they enjoy, either from the producer or from Domaine du Puits es Prat at the end of their tour or stay. |  |
| Photographic Courses are for groups of up to 8 people and any level of experience is welcome. Tuition is by Tim Hazael BA. who is a professional freelance photographer with over 30 years experience. He works hands-on with each group, taking his own pictures to use and discuss at the end of the day alongside the images of each pupil. Each student has advice and guidance on finding the best angles and all the basic techniques of composition, exposure, lighting etc., and some tricks of the trade are taught. Landscape, portraiture, reportage, still-life and architectural photography are just some of the topics that can be explored, in both digital and film. Computer technology is embraced and encouraged. Painting Courses cater for up to 8 people, and any level of experience is welcome. Tuition is by Sasha Hazael who originally trained as a Fine Artist graduating with a BA honours and until recently worked as an illustrator for advertising and publishing companies in London. Her tuition is hands-on and she will work with the pupil while using her own painting or drawing for instruction, guide them through every problem in parallel. The course is devised for individual needs and is open to complete beginners through to the experienced artist. |

Cathar Castles in Rouissillon tours for guests interested in the tragic history of the region, in particular the Albigensian Crusade. A bloodthirsty and cruel campaign designed to eradicate religious pacifists known as the Cathars or Albigensians in 1208AD. Their last strongholds were the many castles built originally by the Spanish, that provided a much needed refuge from the constant attacks by Simon De Montfort and Louis IX. These awe-inspiring Castles are built on a limestone ridge north of Perpignan which until 1659, formed the border between France and Spain. The tour takes in three of the most dramatic from the most southerly at Puilaurens to Château De Queribus and Peyreperteuse. The homeward trip is through the stunning ‘Gorges De Galamus’, one of the many breath-taking natural wonders in the region. |
